Bruschetta

Description

Italian Bruschetta is a versatile and traditional appetizer that comes from Italy, where it originally started as a way to use up stale bread. The word “bruschetta” comes from the Italian verb “bruscare,” meaning to roast over coals, referring to the grilling of the bread. It is typically served as a starter or snack and can have a variety of toppings, but the classic version remains the most popular.

Ingredients:
  • 1 loaf of rustic Italian bread (such as ciabatta or country-style bread), sliced
  • 4-5 ripe tomatoes, finely diced
  • 2-3 cloves garlic, peeled and halved
  • Fresh basil leaves (10-12 leaves), torn
  • Extra virgin olive oil (3-4 tablespoons)
  • Sea salt to taste
  • Freshly ground black pepper to taste
  • Balsamic vinegar (optional for drizzling)
Instructions:
Step 1: Grill the Bread

Slice the Italian bread into thick slices (about ½ inch). Brush both sides of the bread lightly with extra virgin olive oil. Grill the bread on a hot grill or in a preheated oven at 400°F (200°C) until crispy and golden on both sides, about 2-3 minutes per side. Alternatively, you can toast the bread in a pan or toaster.

Step 2: Garlic Rub

While the bread is still warm, take a halved garlic clove and rub it across the top of each slice. The warmth of the bread will release the garlic’s natural oils, giving it a subtle yet fragrant flavor.

Step 3: Prepare the Tomato Topping

In a bowl, mix the diced tomatoes with a generous amount of extra virgin olive oil, a pinch of sea salt, and black pepper. You can add a splash of balsamic vinegar for a touch of acidity, though this is optional. Tear the fresh basil leaves into small pieces and stir them into the tomato mixture.

Step 4: Assemble

Spoon the tomato mixture onto each slice of grilled bread, making sure to drain off excess tomato juice to prevent the bread from becoming soggy. Drizzle with a bit more olive oil and balsamic vinegar if desired.

Step 5: Serve

Garnish with additional basil leaves or a sprinkle of sea salt. Serve immediately while the bread is still warm and crispy.

Variations:
  • Prosciutto and Cheese Bruschetta: Add slices of prosciutto and a sprinkle of Parmesan or mozzarella.
  • Mushroom Bruschetta: Sauté mushrooms with garlic and herbs, then top the bread.
  • Olive Tapenade: Spread a layer of olive tapenade before adding the tomatoes for a richer, saltier flavor.

This simple yet delicious dish is all about using fresh, high-quality ingredients to create the perfect blend of flavors. It’s a staple in Italian cuisine and a great appetizer for any occasion!
