Instructions:

Step 1: Prepare the Ingredients:

  • Drain and rinse the white beans and put them in a mixing bowl.
  • Add the chopped red onion, halved cherry tomatoes, diced cucumber, and chopped parsley (or basil).
  • If you’re using capers, add them to the salad for extra flavor.

Step 2: Make the Dressing:

In a small bowl or jar, whisk together the olive oil, lemon juice (or red wine vinegar), minced garlic, salt, and pepper. If you want a little heat, add the red pepper flakes.

Step 3: Combine:

Pour the dressing over the salad and toss everything together gently until the ingredients are well-coated.

Step 4: Chill and Serve:

  • Let the salad sit for 10-15 minutes so that all the flavors to meld together. You can also refrigerate it for a few hours if you want to serve it chilled.
  • Taste and adjust seasoning if needed. Before serving, sprinkle with grated Parmesan or shaved pecorino if desired.

Variations:

  • Add greens: You can toss in some arugula, spinach, or mixed greens for extra freshness.
  • Protein boost: Add tuna, grilled chicken, or even mozzarella for a heartier dish.
  • Olives: Add a handful of black or green olives for a salty, briny flavor.
